Twice fried green plantain – Patacones – Tostones
Tostones, also known as patacones in Panama are very easy to make. It is made by twice frying green plantains.
First get the fresh green plantains. Cut both of the ends off. Then take a knife and slice longitudinally through the thick skin. Pry and peel.
Cut each plantain into about 3/4 inch sections.
Heat oil in a fryer. Add the plantain cuts into the hot oil. Fry for about two minutes and remove. When cooled some but still warm use a jar or a masher to smash down each cut. It will form a circular green plantain flattened patty.
Fry each of the patties for a about two minutes or until a golden crisp. Remove from hot oil and then salt.
