Cole Slaw From Juiced Carrot Pulp
I continue to drink a lot of fresh carrot juice that I juice once a week or so. I hate throwing away all that good tasting pulp. I am continuing to find good use for it. Here goes my new one. I know it is rather simple but you have got to start somewhere.

Added some apple cider to put some moisture back in.
Do you juice carrots. Do you juice other vegetables? What do you do with the pulp? Do you use it in other dishes? Do you incorporated it elsewhere? Do you compost. Tell us what you do. I feel so guilty throwing away all that fiber. So far I have made this coleslaw, a carrot frittata and carrot biscuits.
